Villa’s VMF Restaurant has received a host of awards and acknowledgments – now you can dish up the same glorious grub thanks to a claret and blue cookbook.

‘A Collection of our Favourite Recipes’ is a cookbook serving up a host of mouth-watering dishes from the heart of Villa Park.

It is a cookbook with a difference, though, with the recipes coming from the students and chefs from VMF – Villa Midlands Food.

VMF launched in October 2010 and offers delightful dishes tapping into the varied cultures and cuisines within the area.

It is a unique eaterie too, with the staff forming a hospitality training programme, with students from less privileged backgrounds working hard to improve their lives and earn a career in the exciting industry.

VMF has already won a host of awards for its stunning food and now you can serve up delightful dishes through the pages of this culinary classic.

There’s stunning starters like sweetcorn soup, marvellous mains like masala-spiced seabass, chicken bhuna, pork three ways, confit duck leg, jerk chicken and delightful desserts such as lemon tart and chocolate tart.

Alison Plant, head of hospitality and events, said: ‘Sample the progress made by our up-and-coming chefs and the wonderful food they make week-in and week-out by trying some of the dishes in this cookbook.

‘It’s easy to use. You’re given the ingredients needed and then how to create the dish VMF-style.’

The cookbook launches this Friday, priced at £3 and is available at VMF.

VMF – found in Trinity Road’s Directors – is open Friday and Saturday 7-10pm and Sunday 12noon-3pm.

A three-course dinner menu is £19.95, with a three-course Sunday lunch priced at 16.50.

There is a new summer menu so it’s well worth popping in, tasting some quality food and getting your hands on the new cookbook.
